Summer is finally near! If your family is like mine barbecues are a major part of enjoying summer. One of our favorite summer meals is BBQ-Pulled Pork. But some times standing over a hot grill to slow cook pork and make homemade sauce isn’t exactly appealing after a long day or hectic schedule. It can also be hard on a budget. <a href=”http://www.byronsbbq.com/index.html” target=_blank”>Byron’s BBQ makes barbecuing summer fun fast, easy and affordable. It is the perfect “heat-and-eat” solution because it comes packaged in its own aluminum tray which can be warmed on a grill or an oven. Or, to keep the heat out of the kitchen, it can even be warmed in a crock pot. Being a busy mom of two, I love a good short cut that doesn’t compromise on quality, taste or value.
I recently had the pleasure of receiving a try of Byron’s BBQ-Pulled Pork to review with my family. Like I said, barbecues are a major part of my family enjoying the summer together, so when I suggested leaving all the hard work and grilling to Byron’s in stead of homemade, the initial response was not very positive.
I decided to change up our usual BBQ sandwiches a bit and prepared BBQ Empanadas!
2 cups Byron’s BBQ, warmed according to package directions
2 Tablespoons red onion, finely minced
1/4 cup dill pickles, minced
1/2 cup sharp Cheddar cheese, shredded
2 packages prepared pie dough (recommended: Pillsbury refrigerated pie dough)
1 egg, lightly beaten
BBQ sauce for dipping
Preheat oven to 350 degrees F. Coat a baking pan with non-stick cooking spray; set aside. In a medium mixing bowl, combine BBQ, onion, minced pickles, and cheese. Roll out pie dough and cut into circles using a 3 inch biscuit cutter. Brush egg wash around edges of each circle. Place a scant Tablespoon of BBQ mixture in center of each circle. Carefully fold over the circle to form a semicircle. Crimp the edges with a fork; place on prepared baking pan. Brush tops of empanadas with egg wash and bake for 22 to 25 minutes, or until golden brown. Serve with your favorite BBQ sauce for dipping.
Once my family tasted the delicious hickory flavor and quality of Byron’s their initial response changed for the better. The BBQ Empanadas were amazing! Thanks to <a href=”http://www.byronsbbq.com/index.html” target=_blank”>Byron’s BBQ-Pulled Pork I was able to enjoy a lot less time prepping and cooking and a lot more time with my family.
