It took our daughter over a year to ease her way into living a vegan lifestyle. As her parents, we do what we can to be supportive. One of the biggest adjustments has been meal planning. Most of her meals take a lot longer to prepare and cook. Then there is the clean up. So much clean up! It makes me appreciate when I find a product that really works. Like the new Scotch-Brite® Scrubbing Dish Cloth. It combines a high quality dish cloth with the power of Scotch-Brite® scrubbing dots for a quicker and easier clean. What better dish to stat using this new product than our daughter’s favorite Easy Vegan Lasagna?
I bought a 2-pack of Scotch-Brite® Scrubbing Dish Cloth at Walmart for only $4.98. Available in tan, coral, and navy.
They look and feel great! One side of the cloth is a high quality fiber dish cloth, and the other side has Scotch-Brite® scrubbing dots (technology originating from their stay clean sponges). I like that my old stand-by dish cloth can clean almost anything in my kitchen, but sometimes I had to use something stronger to scrub off stuck on messes, so this is really impressive.
Easy Vegan Lasagna
2 tablespoons olive oil
1 teaspoon salt
2 teaspoon ground black pepper
1 cup chopped onion
1/2 cup chopped green pepper
4 tablespoons minced garlic
4 (14.5 ounce) cans stewed tomatoes
2 sm cans tomato paste
1/2 cup chopped fresh basil
1/2 cup chopped parsley
2 pounds firm tofu
1 bag fresh spinach
1 (16 ounce) package oven ready lasagna noodles
Make the sauce: In a large saucepan, over medium heat, heat the olive oil. Place the onions and green pepper in the saucepan and saute them until they are soft, about 5 minutes. Add the 2 tablespoons of garlic; cook 5 minutes more.
Place the stewed tomatoes, tomato paste, basil and parsley in the saucepan. Stir well, turn the heat to low and let the sauce simmer covered for 30 minutes. Add the salt.
Preheat the oven to 400 degrees F (200 degrees C).
Place the tofu blocks in a large bowl. Add the remaining garlic, basil and parsley. Add the pepper, and mash all the ingredients together by squeezing pieces of tofu through your fingers. Mix well.
Assemble the lasagna: Spread 1 cup of the tomato sauce in the bottom of a 9×13 inch casserole pan. Arrange a single layer of lasagna noodles, sprinkle 1/2 of the tofu mixture over the noodles. Distribute the spinach evenly over the tofu. Next ladle 1 1/2 cups tomato sauce over the tofu, and top it with another layer of the noodles. Then sprinkle another remaining tofu mixture over the noodles, top 1 1/2 cups tomato sauce, and place a final layer of noodles over the tomato sauce. Top the noodles with the remaining tomato sauce over everything.
Cover the pan with foil and bake the lasagna for 45 minutes.
This is one saucy lasagna! When our daughter was done cooking, I found stuck on sauce all over our kitchen! Not just the pots and pans, but the counter, the glass stove-top, the stainless fridge door, and even on our ceramic tile.
While I would typically have to use two or even three things to clean up a mess like this, the New Scotch-Brite® Scrubbing Dish Cloth with its dual-capability of being a soft dish cloth and a gentle scrubber with scrubbing dots that don’t scratch, I was able to clean the whole kitchen with one product.
The Scotch-Brite® Scrubbing Dish Cloth cleaned the Easy Vegan Lasagna mess from start to finish. Removing every bit of baked on sauce from the lasagna pan, and cleaning our steal pots without a scratch. It also did a beautiful job on our stove cook-top, and ceramic tile which is no easy task.
I love that the New Scotch-Brite® Scrubbing Dish Cloth is sturdy, fully washable, and reusable. I definitely see it getting a lot of use in our kitchen. I have been using and trusting Scotch-Brite® sponges for years, but this “supercharged” dish cloth is taking cleaning to a whole new level.
