If you are an Incredibles fan and love BBQ… today I have an awesome recipe for you! It’s a new twist on the usual pulled BBQ sandwiches, it looks like pulled pork, but it is actually pulled jackfruit. Yes, I said jackfruit, trust me it is delicious and you are going to love it, as will your BBQ loving friends. We served it at our daughter’s graduation party and it was a huge hit. Just like Pixar’s newest hit Incredibles 2, now in theaters and breaking all kinds of box office records.
You will need:
Jackfruit – 2 cans (in brine or water – NOT SYRUP)
Smoked Paprika – 1 tsp
Chili Powder – 1 tsp*
Brown Sugar – 2 tbsp.
Garlic Powder – 1 tsp
Salt – 0.5 tsp
Pepper – 0.5 tsp
Cooking oil – 3 tbsp
Your favorite BBQ sauce
Directions: Heat 3 tbsp. of oil in a fryin pan, add jackfruit. Mix spices together and sprinkle 1/2 of mixture on top of jackfruit. Fry jackfruit on med-high for 3-5 minutes turning about half way through. Next, add the remaining spice mixture to 1 & 1/2 cups of BBQ sauce, add to pan and bring heat down to low. Simmer for 15 minutes, stir or move around, simmer another 10 minutes. Once jackfruit has softened and begins breaking apart easily, pull it apart with 2 forks until it looks like pulled pork. Remove from heat or transfer to slow cooker on the lowest setting.
* Those that enjoy spicy and want to make them flamin’ can add an additional 0.5 Chili Powder & a chose a spicy BBQ Sauce.
This recipe is great when you want to make a main dish ahead of time. The leftovers also keep nice in the fridge, in-fact I think it has even more flavor the next day. We have made these for parties, camping trips and just because it’s a healthier spin on pulled BBQ and a delicious one.
