Easy Low Fat Lemon Drop Cookies


These cookies use only four ingredients, and mix up in less than 5 minutes! Surprisingly, no oil or butter.

1 box lemon cake mix
1 egg, lightly beaten
1 8 oz container of Cool Whip, thawed
1 – 2 cup powdered sugar

Preheat oven to 350. In a large bowl, combine cake mix, egg, and Cool Whip. The batter will be really sticky!


Form dough into tablespoonfuls and roll in powdered sugar.
Bake for 8 to 10 minutes, until the edges are golden.
Allow to cool 1 minute on baking sheet; then remove to cool completely.


They turned out way better than I expected. The cookies were really soft, and delicious. They were a big hit with my family. In-fact they disappeared so fast, I’m already planning another batch. Perfect recipe for the holidays.

    ok- one more quick question- im confused- 2 cups or 2 containers of cool whip- like in the picture- 2 containers or 2 cups?

      Tess, that was my error. The recipe calls for 1 – 8 oz container of cool whip.
