Easy Vegan Lasagna Recipe & Kitchen Clean up #ScrubCloth

It took our daughter over a year to ease her way into living a vegan lifestyle. As her parents, we do what we can to be supportive. One of the biggest adjustments has been meal planning. Most of her meals take a lot longer to prepare and cook. Then there is the clean up. So much clean up! It makes me appreciate when I find a product that really works. What better dish to stat using this new product than our daughter’s favorite Easy Vegan Lasagna?

I bought a 2-pack of Scotch-Brite® Scrubbing Dish Cloth at Walmart for only $4.98. Available in tan, coral, and navy.


They look and feel great! One side of the cloth is a high quality fiber dish cloth, and the other side has Scotch-Brite® scrubbing dots (technology originating from their stay clean sponges). I like that my old stand-by dish cloth can clean almost anything in my kitchen, but sometimes I had to use something stronger to scrub off stuck on messes, so this is really impressive.


Easy Vegan Lasagna


2 tablespoons olive oil
1 teaspoon salt
2 teaspoon ground black pepper
1 cup chopped onion
1/2 cup chopped green pepper
4 tablespoons minced garlic
4 (14.5 ounce) cans stewed tomatoes
2 sm cans tomato paste
1/2 cup chopped fresh basil
1/2 cup chopped parsley
2 pounds firm tofu
1 bag fresh spinach
1 (16 ounce) package oven ready lasagna noodles


Make the sauce: In a large saucepan, over medium heat, heat the olive oil. Place the onions and green pepper in the saucepan and saute them until they are soft, about 5 minutes. Add the 2 tablespoons of garlic; cook 5 minutes more.

Place the stewed tomatoes, tomato paste, basil and parsley in the saucepan. Stir well, turn the heat to low and let the sauce simmer covered for 30 minutes. Add the salt.

Preheat the oven to 400 degrees F (200 degrees C).

Place the tofu blocks in a large bowl. Add the remaining garlic, basil and parsley. Add the pepper, and mash all the ingredients together by squeezing pieces of tofu through your fingers. Mix well.

Assemble the lasagna: Spread 1 cup of the tomato sauce in the bottom of a 9×13 inch casserole pan. Arrange a single layer of lasagna noodles, sprinkle 1/2 of the tofu mixture over the noodles. Distribute the spinach evenly over the tofu. Next ladle 1 1/2 cups tomato sauce over the tofu, and top it with another layer of the noodles. Then sprinkle another remaining tofu mixture over the noodles, top 1 1/2 cups tomato sauce, and place a final layer of noodles over the tomato sauce. Top the noodles with the remaining tomato sauce over everything.

Cover the pan with foil and bake the lasagna for 45 minutes.


This is one saucy lasagna! When our daughter was done cooking, I found stuck on sauce all over our kitchen! Not just the pots and pans, but the counter, the glass stove-top, the stainless fridge door, and even on our ceramic tile.

    I haven’t tried this Scotchbrite product yet, I will try it next time! I love making vegetarian lasagna, I haven’t tried using tofu instead of cheese. I love tofu, and this sure looks delicious, I’d like to try it.

  4. That lasagna looks great! As a lifelong vegetarian who limits dairy, I’m always looking for new recipes. I’m also a huge fan of using tofu as a substitute (it’s great as a “scramble” instead of eggs too!).

  5. Now, I know that I am going to have to go out and invest in that dish cloth. I loved that you demonstrated it cleaning a really dirty dish. Usually , you get the tomato sauce stuck on the cloth and you have to get a clean one to wipe down the stove and counter.

  6. The lasagna looks delicious! I wouldn’t have thought to use tofu in it, but that’s really smart! As for the dish cloth, I’m going to have to get one of those! I get so tired of having a green scrubbie, plus a sponge, plus a wash cloth, etc. I love the idea of just one tool!

  12. I don’t know that I’ve ever had a vegan lasagna, but boy does this one look delicious! Scrubbing pans is my least favorite part to making dinner — why does it have to take so long?! I’m excited to try the Scotchbrite Scrubbing Dish Cloths!

  15. We love these scrub cloths, we always have them on hand. I have never made lasagna – sad I know. I might need to try this recipe. We love the frozen lasagna for a fast dinner but I know this would be a much better recipe!

  18. I’ve never tried vegetarian lasagna, but this looks great! I like the addition of bell peppers and tofu. The tofu probably gives a silky texture to the sauce like ricotta.
