Beanballs & Zucchini Strips #VeganFoodShare

I wasn’t planning to blog this recipe when I made it, but it turned out so good and well liked that I decided to share it with my readers.

Ingredients:

2 fresh zucchinis
1 can of black beans
1 Jar of organic marinara sauce
3/4 cup uncooked oats
1 cup vegan bread crumbs
5 tbs Soy sauce
1/4 cup vegetable oil

Directions:

Slice zucchinis into strips, cook in hot pan with 2 tbs of soy sauce until soft but not mushy. Set aside.
Drain black beans, and mash half in a large bowl, mix in oats, and 2 tbs soy sauce.
Roll into balls, and coat with bread crumbs.
Heat oil and fry bean balls until browned, and a little crisp. I pat mine dry to remove any excess oil.
Warm marinara sauce.

Layer on plate before serving, starting with zucchini.

This recipe is perfect for any weekday dinner. The only thing I will do different the next time is to slice the zucchinis thinner.

  16. I have never tried preparing zucchini this way, it looks and sound delicious. I’m the only one that like zucchini at home but I think if I cook it like that, they might like it.

  17. I like that this recipe is healthy, but also very hearty. This would be a good option to make the bean balls on top of zoodles as well.
