Isn’t it funny when you have never heard of something that all of a sudden it starts popping up everytime you turn around? That recently happened to me after having received the kit below from Red Gold. It contained sumptuous sounding varieties of their petite diced tomatoes, garlic & olive oil, zesty lime juice & cilantro, hot green chilies and just plain tomato, along with a tomato spreader, a nifty Red Gold apron and a recipe guide.
So, you might be asking, what out of those items hadn’t I heard of before? The recipe guide was entitled, “Easy Aioli recipes”, and I had no idea what aioli was, and had to resort to looking it up online. I am an avid food show watcher and was surprised that this condiment didn’t ring a bell.
According to the Merriam-Webster dictionary, aioli is “a mayonnaise flavored with garlic and sometimes other ingredients (as red pepper)”. The origin of AIOLI is occitan, from ai garlic + oli oil, it’s first know use was 1896! Wouldn’t you know it, once I looked it up and discovered what is actually was, I started seeing a local fast food joint advertising their new aioli-infused chicken sandwich!
The recipe card further intrigued me, since it contained a base recipe for aioli, which requires a 14.5 ounce can of Red Gold petite diced tomatoes, drained, along with ½ cup light mayonnaise, which makes a tomato aioli. There are nine more recipes given, where you substitute one of the flavored Red Gold petite diced tomatoes and adding some seasonings for more flavor-enhancing options! One that really caught my eye (and perked my taste buds) is the one where you take the basic recipe and add 3 Tbsps prepared horseradish, 1 tsp Thyme and salt and pepper to make horseradish aioli. Sounds so yummy to me.
On the back of the recipe card are five actual recipes that you can incorporate the various aioli flavorings in. I decided that the “Best Year Round BLT with tomato aioli” was one that I wanted to try. #RedGoldRecipes.
MAKES 4 SERVINGS PREPARATION TIME: 20 MINUTES
½ cup light mayonnaise
1 (14.5 ounce) can RED GOLD® PETITE DICED TOMATOES
4 large lettuce leaves
12 slices bacon, cooked and drained
Ground black pepper to taste
Combine mayonnaise and RED GOLD® PETITE DICED TOMATOES to make the Tomato Aioli.
(It’s also suggested that you combine in a small bowl and refrigerate to blend the flavors.)
Place lettuce on 4 slices of bread and then add three strips of bacon and top with Tomato Aioli and black pepper. Place slice of bread on top. Cut in half and serve.
I wasn’t sure how I was going to like this, since I never use mayonnaise, let alone light mayonnaise. I have always bought and used Miracle Whip in all my cooking, having been brought up on it. I wanted to stay true to the recipe, so I decided to purchase a large jar of light mayonnaise. This is in hopes that I would just love the aioli and want to try all of the flavors!
We just finished our “Best Year Round BLT with tomato aioli” sandwiches and I have to say that they were great! My husband, ever the purest, had to have sliced tomatoes on his. I, however, let the delectable tomato flavor of the aioli brighten up one of my favorite sandwiches, bringing it to new heights. My husband remarked that with a side of chips and a tall glass of lemonade, this would be the perfect summer lunch. Even though it was a spring 50ish day, I would say that I agree with him, but it was perfect for today, as well! So tasty, something I will definitely be making again in the future.
I am sure glad that I decided to buy the larger jar of mayonnaise, I am a new fan and a new-found fan of aioli and cannot wait to try out the other medley of flavors the Red Gold Petite Diced tomatoes with their lively flavors have to offer.
