I recently received a variety of Hodgson Mill pasta to cook with. The angel hair pasta was a delicious way to change up our regular family spaghetti night. I’m pretty sure we’ll never go back to serving white pasta again. Below is my original Taco Pasta Salad recipe. Definitely a family favorite.
Taco Pasta Salad
1 lb ground beef, browned and drained
1 package taco seasoning
About 8 to 9 ounces of Hodgson Mill Whole Wheat Whole Grain Medium Shells
1 head of lettuce, chopped
1 can diced organic tomatoes, plain
1 medium green pepper, diced
1 medium onion, chopped
1 cup shredded cheddar cheese
1 cup of taco flavored chips, crushed
1 cup Catalina salad dressing (optional)
1. Cook pasta, drain and cool.
2. Mix Taco seasoning into browned ground beef.
3. Add tomatoes, green peppers and onions. Simmer for 10 minutes.
4. Add pasta to meat mixture.
5. Just before serving stir in chopped lettuce, crushed chips.
Add dressing to taste. My husband and daughter enjoy the dressing, I like the recipe better without it.
It’s quick, and easy and makes enough to have left overs. We often enjoy it cold, right out of the fridge, making it a great summer dish.
