Think going vegan means you have to give up the classic comfort foods? This easy lentil loaf is a great replacement for those that love old fashion meat loaf, but want to stick to a plant based diet.
1 medium size onion
1 cup frozen vegetables
1/2 cup of walnuts finely chopped
2 cups of cooked mashed lentils
1 cup vegan crackers (smashed) or bread crumbs
3 tbs apple sauce
4 tbs ketchup
2 tsp garlic salt
Mix mashed lentils, and walnuts in large bowl.
Add crackers. Stir until well blended.
Add apple sauce, 2 tbs ketchup, garlic salt.
Fold in vegetables.
Put into loaf pan. Top with ketchup. Bake at 350 for 40 minutes or until edges are brown and crisp.
This lentil loaf is one of our teenage daughter’s favorite vegan main dishes. In-fact our whole family really enjoys it. It is very flavorful, and the texture is very similar to actual meatloaf. It’s been fun trying new recipes, and a new way of eating since our daughter began her vegan journey. It has really opened us up to trying new things.
