I have been making this sausage and peppers recipe for years. Now that we have a pressure cooker, the Mealthy Multipot, I decided to give the slow cooker option on it a try. It turned out great!
1 28-oz. can crushed tomatoes
1 14-oz can stewed tomatoes
1 tsp. dried oregano
1 large onion, diced
1 yellow bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 package Mild Italian sausage, cut into chunks
1 package Sweet Italian sausage, cut into chunks
A pinch of kosher salt
A pinch of ground black pepper
Combine tomatoes, salt, pepper, oregano, and sliced peppers. Top with sausage and stir well. Slow cook on low for six to eight hours. Mine is usually cooked fine at six hours but have a lot more flavor at eight hours.
Serve on top of white rice and/or on fresh hoagie rolls, both are delicious and always a hit with my family.
